Ham steak with cider-raisin sauce

Serves two

Ingredients

■ 1 small onion, fi nely chopped
■ 1 1/2 cups apple cider
■ 2 Tbsp cider vinegar
■ 1 tsp mustard seed
■ 1 tsp Dijon mustard
■ 1 Tbsp olive oil
■ 2 ham steaks 1/2-inch thick
■ 1 tsp fresh gingerroot, peeled and grated
■ 2 Tbsp unsalted butter
■ 1/4 cup raisins
■ 1 Tbsp freshly chopped parsley

Directions
Mix cider, vinegar, mustard, and mustard seed together in nonmetallic bowl and set aside.

In heavy skillet, heat olive oil over moderately high heat. Sauté ham steaks about 4 minutes on each side. Transfer to plates and keep warm.

Pour off grease from sauté pan and add onion and gingerroot. Cook for about 1 minute.

Add cider mixture, stirring occasionally, until reduced by half (about 5 minutes). Add raisins to sauce and whisk in butter and parsley.

Pour sauce over ham and serve warm.
