Paul Kirk never aspired to be the king of Kansas City barbecue. Kings, after all, can be dethroned.
But he is the Kansas City baron of barbecue—a world-known barbecue champion, an author, a New York City restaurant owner, and, first and foremost, a teacher. Kirk travels throughout the country and goes overseas to give his classes.
Spirited knowledge of barbecue
Kirk, who lives in Roeland Park, will bring his spirited knowledge of barbecue on June 5 to the Welcome Center at Tallgrass Creek in Overland Park. His presentation is part of Tallgrass Creek’s Center for Continuous Learning.
Patience and self-confidence are the keys to making good barbecue, Kirk says. He may cook a brisket for 12 to 16 hours. Low and slow heat is the way to make barbecue delicious. “Don’t second-guess yourself,” Kirk says. “In other words, if you think something is going to work, try it. Don’t be afraid to take a chance.”
What class participants will learn
When Kirk visits Tallgrass Creek he will first help participants develop a meat rub. Then he will demonstrate how to prepare ribs. Class members will make a barbecue sauce and get to sample Kirk’s famous chicken and ribs.
