NOVI, MI – Did you ever wonder how much gingerbread it would take to build a life-size gingerbread house? Well, Director of Dining Kevin Cunningham wondered when Senior Facilities Manager Dave Mercer asked him to bake enough to cover a house that was being built at Fox Run as part of their extensive holiday décor.
“It took some calculations to figure it out,” says Cunningham. “I’ve never seen so much gingerbread in one place.”
Cunningham has had his staff baking gingerbread in every available oven in Fox Run’s dining services kitchen since right after Thanksgiving. The intoxicating smell of the slightly spicy sweetbread has teased the community for days. He estimates that it will take residents and staff several days to complete the project.
When all is put together, Cunningham believes a total of 2,150 pounds of homemade gingerbread, 600 quarts of royal icing, and over 250 lbs. of candy such as gum drops, candy canes, chocolates, and licorice will be applied by hand to the house, which is 8 feet wide, 6 feet deep, and stands 7 feet tall.
Fox Run’s one-of-a-kind gingerbread house will serve as the community’s holiday centerpiece for children of all ages to enjoy. People got a sneak peek at the house at the community’s resident and staff open house this past Sunday, December 3. (Kathie Shaffer)
